As sad as it sounds, I am feeling a bit overwhelmed with the whole SCD thing. I don't know why. No, I do know why. Labels lie. Really, they do. They don't have to list everything in the ingredient list and that can be a problem. Did you know that it is just about impossible to find meat that hasn't been injected with *something*? Really... take a look at your meat. Ask your meat guy/butcher. I did, and was pretty mad. Cow blood in the ground beef? Lemon juice concentrate in my pork?? "Natural Flavors" in my everything else? Um... no thanks. I think I will buy a cow.I spent all day yesterday at the grocery store or looking up ingredients to see if they are "legal." Not kidding. Two trips to Meijer, one trip to Wal-Mart, one trip to my local fruit and meat market, two 1/2 hour discussions with two separate butchers, three hours on Breaking The Vicious Cycle and two Yahoo lists looking up ingredients and brand names... Someone tell me this gets easier. Please. Someone. Anyone. Now that I know what brands and ingredients to look for, I really think it will. Hopefully, I can stop whining about it, too.
We are going to officially start the Intro Diet on Wednesday, because I have read that often you feel worse during the intro and I want to make sure that we have nothing planned so that we can stay home and feel bad if we need to.
We are supposed to be on the intro diet for at least two but not more than five days. I am planning on two, but will have food on hand in case either of us needs to be on it longer.
Sooooo...
As always, all meals are served with a salad, fruit and vegetable (for those who can tolerate.)
3/02 - Sunday
Spaghetti squash with Valeria's sauce (I have to use Campbell's tomato juice instead of the tomato puree, and it needs to reduce. Between the sauce simmering away and the onions in the oven to dehydrate, my house smells really good right now. My neighbor told me that every time we cook she gets the urge to order a pizza. Who me? Use a lot of garlic and onions?)

Grilled pork chops, steamed broccoli, SCD applesauce
3/04 - Tuesday
Pot roast in the crock pot (beef broth, porcini mushrooms, onions and garlic), honey roasted carrots (I have to come up with another crock pot option for archery night. I think we are all going to be a little tired of pot roast soon.)
3/05 - Wednesday
Homemade chicken soup, SCD cheesecake, homemade gelatin, various side dishes for the non SCD'ers in the house
3/06 - Thursday
Broiled hamburger, SCD cheesecake, homemade gelatin, various side dishes for the non SCD'ers in the house
3/07 - Friday
Grilled lime shrimp, roasted brussels sprouts, SCD pumpkin pie
3/08 - Saturday
Beef fajitas with onions and peppers, SCD sour cream (dripped yogurt), SCD salsa, and grated cheddar cheese all rolled up in a romaine lettuce tortilla (There is a SCD legal cashew butter tortilla recipe out there, but I am too chicken - and lazy - to try it right now.)
